Some Tasty Recipes
We carry many wonderfully delicious specialty foods. To help you out with ideas for using them, here are some tasty recipes we found.
Lone Star Sauce
8 cups mayonnaise
1 cup jalapeños
1 cup green onions
1 T. celery seed
1 t. dry mustard
1/4 tsp. Texas Traditions Texas Hot Salt
Puree jalapeños and onions in blender or food processor. Place mixture in mixer bowl. Add remaining ingredients and beat on low speed for 5 minutes.
Makes 8 cups. Serve with fries, fried cheese, artichoke hearts and buffalo wings.
Sweet n' Spicy Goat Cheese Puff Pastry
1 puff pastry sheet, thawed
1 8-ounce cylinder goat cheese
3 T. Texas Traditions Red Chile Pepper Jelly
1 egg
1 T. water
1 T. roughly-chopped cilantro
Serves 6-8 as an appetizer
Preheat oven to 400 degrees. Line baking sheet with parchment paper or aluminum foil.
Unfold pastry sheet on lightly flowered surface. Spoon jelly in vertical line of the center of the pastry sheet, leaving a 2-inch border at the top and bottom of the sheet. Place the goat cheese, vertically, on top of the jelly. Fold the right side of the pastry over to the right side in the same fashion, again pressing the edge to seal the fold. Pinch together the top and bottom of the pastry to seal ends. Carefully transfer sealed pastry to baking sheet.
In a small bowl, whisk egg and water. Brush egg mixture over the pastry. Bake for 25 minutes, or until golden. Cool for 5 minutes. Transfer pastry to serving platter; slice on diagonal if desired. Garnish with chopped cilantro. Serve warm or at room temperature.
Joy Pepper Shrimp Rolls
1 lb. bacon
1 jar Joy Peppers
1 8-ounce block of cream cheese
1/2 lb. frozen cooked shrimp, thawed (devained and tails removed)
1 can pineapple tidbits
Toothpicks
Take the bacon out of the package and cut the strips in half. Lay a strip of bacon on a flat, clean surface. Place a shrimp in the middle of the bacon strip. With a butter knife, spread enough cream cheese on the shrimp to cover it. Lightly press a Joy Pepper slice into the cream cheese. Top with a pineapple tidbit. Wrap the sides of the bacon slice around the stacked ingredients and secure with a toothpick. Place them in a pie dish or 8x8 square baking pan. Bake in oven at 400 degrees for about 20 minutes or until top of bacon is browned.
Note:
You will run out of bacon before other ingredients, so use the same method above minus the bacon to make some cold hor d'oeuvres. Just be sure the toothpick goes through the shrimp to keep the finished product from falling apart.
Joy Pepper Cheese Ball
Soften one 8 oz. package cream cheese. Chop Joy Peppers (start with less rather than more.) Mix peppers with softened cream cheese, add more chopped peppers to taste. Add shredded cheddar (or cheddar blend) to add some “heft” to the cheese ball. Shape into a ball or log and roll in chopped nuts of your choice. Serve with crackers.
Joy Peppers Deviled Eggs
Boil eggs. Slice once down the center lengthwise. Place the yolks into a separate bowl and mash. Add mayonnaise, chopped Joy Peppers, a little Dijon mustard, and salt and pepper to taste. Mix well. Spoon this mix back into the whites, mounding attractively. Dust with each egg half with paprika or Cajun seasoning, if desired.
Baked Salmon
4 salmon fillets, skin off, about 1" thick
1 lemon
Salt & pepper
3/4 cup Black & Green Olive Tapenade
Preheat oven to 375 degrees. Place salmon in a single layer in a lightly oiled baking dish. Lightly salt and pepper the salmon and top with lemon juice. On top of each piece of fish spread 2 t. of tapenade and top with lemon slice. Bake salmon, uncovered, for 10 to 12 minutes until done. |

Father's Day is a time to say thanks to Dad, a day proposed by Mrs. John B. Todd to honor her father, a widower, who reared five children. The presidential proclamation by Lyndon Johnson in 1966 established the third Sunday in June as Father's Day.
Father's Day has become a day to honor not only fathers, but stepfathers, uncles, grandfathers, and adult male friends - all men who are father figures.
